Spicy Carrot and Cilantro Slaw

If you enjoy a slaw with a bit of a kick, this recipe using Kricklewood Farm Roasted Chili Oil is definitely for you! Choose carrots of different colours to make it your own style.
- 4 cups peeled and julienned carrots of assorted colours
- 2 tablespoons Kricklewood Farm Roasted Chili Sunflower Oil
- 1 tablespoons fresh lime juice
- 1 1/2 teaspoons sugar
- 1/2 teaspoons kosher salt plus more for seasoning
- 1/2 cup (loosely packed) fresh cilantro leaves
- Freshly ground black pepper
- Toss carrots, Kricklewood Farm Roasted Chili Sunflower Oil , lime juice, sugar and salt in a large bowl.
- Let marinate for 15 minutes, tossing occasionally.
- Add cilantro and toss to evenly incorporate.
- Season to taste with salt and pepper and serve.
